Ingredients.
Marinade for the Chicken make one day ahead
- 2 Cups of Olive Oil.
- 4 Large Red Chilli's Finely chopped along with the seeds
- 3 Tbs Paprika
- 2 Tsp Cayenne Pepper.
- 2 Tbs Ground Black Pepper
- 2 Large chickens cut in half.
- 2 Lemons cut in to slices.
Method
- Make the marinade the day before you need it.
- Next day push all the marinade through a sieve & discard the solids that are left.
- Now rub this all over the chicken half’s & put them on a tray then cover the chicken with the slices of lemon & cover the lot with cling film & let them rest in the fridge for at least 4 hours but you can also do this 1 day ahead of use.
- Take the chicken out of the fridge & allow them to come to room temperature the fry the chicken half’s in a very hot frying pan until brown all over & then finish off the cooking process in the convection oven.
