Ingredients.
- 1.25kg Chicken Pieces
- 1Tsp Salt.
- 1 Lemon
- 1 Onion Chopped
- 1 Clove Garlic Chopped
- ¾” Fresh Ginger Finely chopped
- 15Fl Oz Natural Yoghurt.
- 1 Chilli Chopped
- 2 Tsp Garam Massala
- 3Tbs Yellow Food Colouring
- 1.5 Tbs Red Food Colouring
- 2 Limes cut in to wedges for garnish.
Method.
- Cut slits in to all the chicken pieces.
- Spread the chicken pieces out on to a deep-sided tray & sprinkle with salt & pour ¾ of the lemon juice over the chicken.
- Now mix the yoghurt with the onion, ginger, garlic, chilli & garam massala in a food processor until it becomes smooth & set a side.
- Now mix the two food colourings together & coat all the chicken pieces thoroughly in it.
- Take the chicken pieces & place them in a bowl & put any colouring & juices that are remaining in to the yoghurt past & mix.
- Now pour the yoghurt mix over the chicken pieces & mix well & marinade for 24 hours.
- Heat the oven to its maximum temperature & cook the chicken pieces until cooked.
- Serve with rice & lime wedges & sprinkle the dish with some fresh coriander.
