Tandoori Chicken Recipe

Ingredients.

  1. 1.25kg Chicken Pieces
  2. 1Tsp Salt.
  3. 1 Lemon
  4. 1 Onion Chopped
  5. 1 Clove Garlic Chopped
  6. ¾” Fresh Ginger Finely chopped
  7. 15Fl Oz Natural Yoghurt.
  8. 1 Chilli Chopped
  9. 2 Tsp Garam Massala
  10. 3Tbs Yellow Food Colouring
  11. 1.5 Tbs Red Food Colouring
  12. 2 Limes cut in to wedges for garnish.

Method.

  1. Cut slits in to all the chicken pieces.
  2. Spread the chicken pieces out on to a deep-sided tray & sprinkle with salt & pour ¾ of the lemon juice over the chicken.
  3. Now mix the yoghurt with the onion, ginger, garlic, chilli & garam massala in a food processor until it becomes smooth & set a side.
  4. Now mix the two food colourings together & coat all the chicken pieces thoroughly in it.
  5. Take the chicken pieces & place them in a bowl & put any colouring & juices that are remaining in to the yoghurt past & mix.
  6. Now pour the yoghurt mix over the chicken pieces & mix well & marinade for 24 hours.
  7. Heat the oven to its maximum temperature & cook the chicken pieces until cooked.
  8. Serve with rice & lime wedges & sprinkle the dish with some fresh coriander.
