Ingredients
- 4 large chicken thighs split in half
- 4 Tbs Butter melted
- 4 Tbs English mustard
- 2 Tbs Lemon juice
- 1 Tbs Brown sugar
- 1 Tsp Paprika
- 3 Tbs Poppy seeds
Method
· Arrange the chicken pieces in a single layer in an ovenproof dish.
· Mix together the melted butter, mustard, lemon juice, sugar & paprika in a bowl with salt & pepper & brush the upper surfaces of the chicken & bake in the oven at 200c for 15 minutes.
· Remove the dish from the oven & sprinkle the chicken with poppy seeds & turn them in the dish then coat the under side of the chicken with the mustard mixture & return to the oven for a further 15 minutes.
· Serve with hot buttered pasta shells.
