French Tomato Soup

Ingredients

  • 1 Tin Peeled Tomatoes
  • 3 Cloves Garlic crushed
  • 2oz Butter
  • 2oz Flour
  • 2 Onions Sliced
  • 1 Tbs English Mustard
  • 4 Tbs Tomato Paste
  • 1 Tbs Sugar
  • 1 Tsp Dried Oregano
  • 1 Tbs Worcestershire sauce
  • ½ Ltr Tomato Juice
  • 1 Ltr Chicken Stock
  • Salt & Pepper to Taste

Method

  • Melt the butter in the pan then add the flour to make a roux & cook out for approximately 2 minutes.
  • Then remove from the heat & add the chicken stock whisking all the time to prevent lumps.
  • Now add all other ingredients & bring to the boil skimming off any impurities that come to the top.
  • Then leave the soup to simmer for around 45 minutes than take it off the heat & blend in a blender until smooth then return to the pan check for seasoning & reheat before serving
