Ingredients
- 1 Tin Peeled Tomatoes
- 3 Cloves Garlic crushed
- 2oz Butter
- 2oz Flour
- 2 Onions Sliced
- 1 Tbs English Mustard
- 4 Tbs Tomato Paste
- 1 Tbs Sugar
- 1 Tsp Dried Oregano
- 1 Tbs Worcestershire sauce
- ½ Ltr Tomato Juice
- 1 Ltr Chicken Stock
- Salt & Pepper to Taste
Method
- Melt the butter in the pan then add the flour to make a roux & cook out for approximately 2 minutes.
- Then remove from the heat & add the chicken stock whisking all the time to prevent lumps.
- Now add all other ingredients & bring to the boil skimming off any impurities that come to the top.
- Then leave the soup to simmer for around 45 minutes than take it off the heat & blend in a blender until smooth then return to the pan check for seasoning & reheat before serving
