Ingredients
- 4 cloves of garlic chopped
- 1” piece of fresh ginger chopped
- 2 red chillies finely chopped
- 2 carrots chopped
- 1 large red pepper chopped
- 2 Onions chopped
- 6 potatoes cut in to dice
- 2 Lt chicken stock
- 1 Stalk of lemongrass finely chopped.
- ¼ Btl Lingams sauce
- ½ Tbs paprika
- 1 Tbs tomato paste
- 200gr mature cheddar grated
- ¼ pt single cream
Method
- Put all the vegetables in a pan & sweat out in a little butter.
- Then add the chicken stock, tomato puree, linghams sauce & paprika & bring to the boil then simmer for around 50 minutes or until the vegetables are soft.
- Then put all the soup through a blender & return to the pan now add the cheese & stir over a low heat until melted then add the cream mix thoroughly, season to taste & serve straight away
