El Charro Caldo De Queso (Spicy Cheese & Potato Soup)

Ingredients

  • 4 cloves of garlic chopped
  • 1” piece of fresh ginger chopped
  • 2 red chillies finely chopped
  • 2 carrots chopped
  • 1 large red pepper chopped
  • 2 Onions chopped
  • 6 potatoes cut in to dice
  • 2 Lt chicken stock
  • 1 Stalk of lemongrass finely chopped.
  • ¼ Btl Lingams sauce
  • ½ Tbs paprika
  • 1 Tbs tomato paste
  • 200gr mature cheddar grated
  • ¼ pt single cream

Method

  • Put all the vegetables in a pan & sweat out in a little butter.
  • Then add the chicken stock, tomato puree, linghams sauce & paprika & bring to the boil then simmer for around 50 minutes or until the vegetables are soft.
  • Then put all the soup through a blender & return to the pan now add the cheese & stir over a low heat until melted then add the cream mix thoroughly, season to taste & serve straight away
