Ingredients.
- ¼ Pt Mayonnaise.
- 3 oz Blue cheese crumbled.
- 1 Tbs Freshly chopped chives.
- 500gr of Boneless chicken thighs.
- 2 Rashers of good bacon chopped.
- 1 crushed clove of garlic.
- 1 Onion chopped very fine.
- 2 Tbs Freshly chopped tarragon.
- 2oz White bread crumbs.
- 1 Egg beaten.
- 1 oz Flour.
- Salt & pepper
Method.
- First make the mayonnaise put the blue cheese, mayonnaise & Chives in a food processor & puree until smooth then store in the fridge.
- Now mince the chicken & the bacon in a food processor until coarsely chopped.
- Now add the chopped garlic, onion, tarragon, breadcrumbs, salt, pepper & beaten egg & mix well.
- Now add the flour & divide the mixture in to 4 burger shapes & let them rest for 1 hour in the fridge.
- Now fry the burgers until golden brown & cooked right through.
- Then Spread burger buns with some mayonnaise & put some mixed salad leafs on the bottom section of each bun, then add the burger top with blue cheese mayonnaise & a slice of grilled bacon & serve.
