Chicken Satay

Ingredients.

  • 10oz chicken breast cut in to fine slices.
  • 2 cloves of garlic.
  • 1 onion chopped finely.
  • 5Tbs sweet Soya sauce
  • 1Tbs Turmeric powder.
  • 4Tbs fish sauce.
  • 1Tbs lemon juice.
  • Salt & Pepper.

Satay sauce.

  • 1 jar of smooth peanut butter.
  • 100gr toasted & chopped cashew nuts
  • 1 tin of coconut milk.
  • 2 cloves of garlic chopped.
  • ½ fresh ginger finely chipped.
  • ½ an onion finely chopped.
  • 2 red chillies chopped with the seeds.
  • 3Tbs of oil.

Method.

  • Cut the chicken breasts finely & insert them on to the wooden kebab skewers.
  • Mix all the ingredients for the marinade together in a blender & blend until smooth.
  • Then pour all over the Satays & marinade for about four hours.
  • Then put them straight on to the barbeque until properly cooked.
  • Now we make the sauce.
  • Put the oil in a pan & cook the onion, garlic, ginger & chillies in to the oil & cook for two minutes.
  • Then add the jar of peanut butter with the coconut milk & mix well bring to the boil & then take back to a slight simmer
  • Now add the toasted cashew nuts & cook until the vegetables are just tender & serve with the Satays.
