Bacon wrapped Italian chicken with a sweet tomato sauce

Ingredients

Serves 4

  • 4 chicken breasts on the bone
  • 1 tub of Boursin garlic cheese
  • 2 onion cut in to small dice
  • 4oz wild mushrooms cut in to small dice
  • 8oz of good back bacon cut all the fat of the bacon
  • 1 Tin of chopped tomatoes
  • 2 Garlic shallots chopped
  • ¼ Pt of white wine
  • 2 Tbs of honey
  • 2 Tsp oregano
  • Salt & pepper to taste.
  • 1oz of butter

METHOD

  • Cut a pocket in each of the chicken breasts
  • Then mix the cheese with one of the onions & wild mushrooms together & stuff in to the breasts
  • Then wrap the breasts with the bacon & lay on a roasting tray
  • Put in the oven & roast for 20mins

· Now make the sauce

  • Put the tomatoes in a pan with all the other ingredients & bring to the boil
  • Reduce by one third & take any scum that comes to the top off
  • Take off the heat & whisk in 1oz of butter to finish the sauce

· NOW SERVE ON A BED OF GRAIN MUSTARD MASH WITH SOME GREEN VEGETABLES
