Turkey Croquettes

Ingredients

  • 60gr Butter
  • ¼ Cup plain flour
  • 1 ¼ Cups of milk
  • 450gr Cooked turkey, finely chopped.
  • 100gr Button mushrooms finely chopped.
  • ¼ Cup grated cheddar cheese.
  • ¼ Tsp allspice.
  • ¼ Cup flat leaf parsley finely chopped.
  • 3 Eggs.
  • 3 Cups white bread crumbs.
  • 1 jar of cranberry sauce.
  • Juice of 1 orange.
  • Oil to deep fry.

Method

  • Melt the butter in a pan & add the flour & cook out then remove from the heat & add the milk slowly until you have a smooth paste, then return to the heat 7 bring to the boil.
  • Now add the turkey, mushrooms, cheese, allspice, parsley & salt & pepper & mix well then remove from the heat & refrigerate until the mixture is completely cold.
  • Now whisk the eggs & set to one side then get a dish of flour & set beside the eggs along with the dish of breadcrumbs.
  • Now shape the cold turkey mixture in to sausage shapes then dip them in the flour than in to the egg mix them pass them through the bread crumbs repeat this process again & deep fry the croquettes & keep them warm.
  • Now add the orange juice to the cranberry sauce & heat through & serve with the croquettes along with some potato wedges & salad.
