Ingredients
- 2 Stalks of lemongrass crushed.
- 1 Tsp Crushed fresh ginger.
- 1 Fresh red chilli chopped finely.
- 2 ½ Pts of water.
- 2 Tbs Thai fish sauce.
- 1 ½ Lb Raw tiger prawns
- 8oz Raw monk fish.
- Grated rind & juice of 1 lime.
- 4oz Button Mushrooms.
- 2 cloves of garlic peeled & chopped.
- 1 Bunch fresh coriander chopped.
- Salt & pepper to taste.
Method
· Bruise the lemongrass & add it with the chopped chilli & ginger to the water & bring to the boil then simmer for 15 minutes.
· Add the fish sauce, prawns & monkfish & simmer for another 5 minutes.
· Now add the lime rind, juice & mushrooms & remove from the heat.
· Now fry the garlic in a pan until slightly soft then add to the soup along with the chopped coriander let stand for 5 minutes than serve.
