Tom Yam Kung Soup

Ingredients

  • 2 Stalks of lemongrass crushed.
  • 1 Tsp Crushed fresh ginger.
  • 1 Fresh red chilli chopped finely.
  • 2 ½ Pts of water.
  • 2 Tbs Thai fish sauce.
  • 1 ½ Lb Raw tiger prawns
  • 8oz Raw monk fish.
  • Grated rind & juice of 1 lime.
  • 4oz Button Mushrooms.
  • 2 cloves of garlic peeled & chopped.
  • 1 Bunch fresh coriander chopped.
  • Salt & pepper to taste.

Method

· Bruise the lemongrass & add it with the chopped chilli & ginger to the water & bring to the boil then simmer for 15 minutes.

· Add the fish sauce, prawns & monkfish & simmer for another 5 minutes.

· Now add the lime rind, juice & mushrooms & remove from the heat.

· Now fry the garlic in a pan until slightly soft then add to the soup along with the chopped coriander let stand for 5 minutes than serve.
