Cream of Broccoli Soup

Ingredients

  • 500gr Broccoli chopped small
  • 4 cloves garlic
  • 2 onions sliced
  • 2oz Flour
  • 2oz Butter
  • 1 Ltr Chicken Stock
  • 6 fl oz white wine
  • 6 fl oz Double cream
  • Salt & pepper to taste.

Method

· Melt the butter then add the flour & make a roux then cook out for approximately 2 minutes.

· Now add the hot chicken stock slowly stirring all the time to prevent lumps.

· Then add the Chopped broccoli, garlic, Onion & salt & pepper & bring to the boil then take back to simmer for 45 minutes.

· Now blend the soup in the blender until smooth & return to the pan & bring back to a slow simmer then add the white wine & simmer for 15 minutes.

Take off the heat & whisk in the cream check for seasoning & serve.
