Ayam Rendang (Indonesian Chicken)

Ingredients

  • 1kg Chicken Portioned
  • 1 Onion Sliced
  • 4 Coves Garlic Crushed
  • 1Tbs Turmeric
  • 1Tbs Ground Ginger Powder
  • 1Tbs Mustard Seeds
  • 4 Red Chilli’s Chopped
  • 1Tsp Shrimp Paste
  • 4 Stalks of Lemon Grass Cut Thinly
  • 2Tbs Lemon Juice
  • 4Tbs Oil
  • Seasoning to Taste

Method

· Blend all ingredients except the chicken & shrimp paste & lemon juice.

· Then add the cooking oil to the pan & heat then sauté' the blended ingredients for five minutes then add 3 cups of water & mix well.

· Then add the chicken & the shrimp paste & simmer until the chicken is half cooked.

· Then add the lemon juice & if the mixture is a little dry add 1 more cup of water then cook slowly until the chicken is completely cooked & serve with fried rice.
