Ingredients
- 1kg Chicken Portioned
- 1 Onion Sliced
- 4 Coves Garlic Crushed
- 1Tbs Turmeric
- 1Tbs Ground Ginger Powder
- 1Tbs Mustard Seeds
- 4 Red Chilli’s Chopped
- 1Tsp Shrimp Paste
- 4 Stalks of Lemon Grass Cut Thinly
- 2Tbs Lemon Juice
- 4Tbs Oil
- Seasoning to Taste
Method
· Blend all ingredients except the chicken & shrimp paste & lemon juice.
· Then add the cooking oil to the pan & heat then sauté' the blended ingredients for five minutes then add 3 cups of water & mix well.
· Then add the chicken & the shrimp paste & simmer until the chicken is half cooked.
· Then add the lemon juice & if the mixture is a little dry add 1 more cup of water then cook slowly until the chicken is completely cooked & serve with fried rice.
