Tabouleh is a light and refreshing salad of bulgur wheat. Tabouleh is found in delicatisms and supermarkets in Australia. It is an excellent salad to eat with shop bought roasted chicken as an easy picnic or a light dinner.

Preparation Time: 10 minutes plus 1 hour soaking of the bulgur wheat
Tabouleh:
- 150g fine bulgur wheat
- 1/2 a medium cucumber, sliced and diced
- 2 large plum or vine ripened tomatoes, diced (small)
- 6 spring onions, finely chopped
- 1 small bunch of flat leaf parsley, finely chopped
- 1 small bunch of mint, finely chopped
- juice of 1 lime
- 3 tbsp virgin olive oil
- maldon salt and freshly ground black pepper
Method:
Tabouleh: Place the bulgur wheat in a bowl and cover it in cold water. Set it aside for 1 hour (30 minutes will do if you are short of time). Drain the bulgur wheat well.
Place the bulgur wheat in a bowl and add all the remaining ingredients. Mix the salad so that all the ingredients are well distributed. Season the salad and serve or cover it and refrigerate it for up to one day before serving.
