
This strictly isn't a tiramisu the famous Italian dessert but is based on it with its coffee flavour and Italian biscuits. I must confess to not being a fan of the traditional tiramisu but love the flavours it is made up of and here I use these to make a very quick but delicious and impressive dessert.

Preparation Time: 15 minutes
Tiramisu Tower
- 42 Italian sponge biscuits
- 120g strong coffee
- 120g coffee liquor e.g. Tia Maria
- 240g mascarpone
- 120g double cream
- 60g icing sugar
- 30g cocoa powder
- 100g continental plain chocolate (70% cocoa solids), shavings
Method:
Preperation: Mix the coffee and coffee liquor together.
Place the cream and mascrapone into a bowl and sieve over the icing sugar and mix it in until well combined.
To Serve: Place 3 biscuits in a square into the center of 6 plates. Stack 4 more biscuits along the lengths of each side. Drizzle 1 1/2 tablespoons of the coffee mixture over the biscuits. Top each serving with a couple of tablespoons of the mascrapone. Dust the mascrapone with the cocoa powder and spinkle over the chocolate shavings. Serve.
