Ingredients
- 2Tbs Olive oil
- 2 Onions sliced
- 2 Parsnips chopped
- 4 Carrots chopped
- 1Lb Celeriac peeled & cut in to dice
- 9oz Potatoes Peeled & cut in to dice
- 2Tbs Korma curry paste
- 3Pts Vegetable stock
- 500gr Tub of plain yoghurt
- 1 Bunch of coriander chopped
Method
- Heat the oil in a pan & fry the onions until soft then add all the other vegetables & mix well
- Then mix in the curry paste & pour in the stock
- Cook for around 40 min then put in the food processor in batches & puree until smooth
- Return the soup to the pan &season to taste then add ½ of the tub of yoghurt & mix well
- Then serve the soup in bowls with a spoon full of yoghurt in the centre of each plate & garnish with chopped coriander.
