Spiced Root Vegetable Soup

Ingredients

  • 2Tbs Olive oil
  • 2 Onions sliced
  • 2 Parsnips chopped
  • 4 Carrots chopped
  • 1Lb Celeriac peeled & cut in to dice
  • 9oz Potatoes Peeled & cut in to dice
  • 2Tbs Korma curry paste
  • 3Pts Vegetable stock
  • 500gr Tub of plain yoghurt
  • 1 Bunch of coriander chopped

Method

  • Heat the oil in a pan & fry the onions until soft then add all the other vegetables & mix well
  • Then mix in the curry paste & pour in the stock
  • Cook for around 40 min then put in the food processor in batches & puree until smooth
  • Return the soup to the pan &season to taste then add ½ of the tub of yoghurt & mix well
  • Then serve the soup in bowls with a spoon full of yoghurt in the centre of each plate & garnish with chopped coriander.
