Malay Chilli Chicken
Ingredients
· 2kg Chicken cut in to pieces
· 2 Onions
· 6 Red chilli’s
· 8 tomatoes
· 10 Cloves of garlic
· 1” Fresh ginger
· 2 Tbs Sugar
· 3 Tbs Fish sauce
· 6 Tbs Tomato ketchup
· 2 Tbs Sambal
· 6 Tbs Lingams sauce
Method
· Fry the chicken in a large frying pan until golden then finish off the cooking in the oven.
· Now blend the onion, garlic. Two tomatoes & ginger in a blender with a little water until smooth then fry in the pan with a little oil.
· Now blend the chillis the same way & add to the pan & cook out for a few minutes.
· Now add the rest of the wet ingredients & cook on a low heat for around 20 minutes.
· Now cut the other 6 tomatoes in to wedges & add to the mixture & heat through then add the cooked chicken & heat through then serve.
