Ingredients.
- 1kg Chicken skinned & cut in to pieces.
- 3 Cloves of garlic
- 1 Onion
- 1” piece of fresh ginger.
- 1 Tsp Chilli Powder.
- 1 Tsp Cinnamon powder.
- 1 Tsp Paprika powder.
- 2 Tbs Tomato puree.
- 1 Red pepper cut in to small dice.
- 1 Tin Chopped tomatoes.
- 1 Pt Double cream
- 2 Tubs of Plain yogurt.
- 2 Fresh chillies chopped.
- Salt & Pepper.
Method.
- Cut the chicken in to pieces & take of outer skin.
- Blend the garlic, ginger & onion in separate batches in a blender until smooth.
- Then add a little oil in to a frying pan & cook the onion until slightly brown
- Then add the ginger & garlic paste & sauté..
- Then add tomato puree & cook for a further two minutes.
- Then add all dry spices & sauté then add some water & cook for another 2 minutes.
- Then add the chicken pieces & coat evenly with this mixture.
- Then add the chopped tomatoes & bring the mixture to the boil then take it back to a very low simmer.
- Then add the red pepper, cream, fresh chili & yogurt & mix thoroughly & cook slowly for around 40 minutes.
- Serve with jasmine rice.
