Kashmiri Chicken

Ingredients.

  • 1kg Chicken skinned & cut in to pieces.
  • 3 Cloves of garlic
  • 1 Onion
  • 1” piece of fresh ginger.
  • 1 Tsp Chilli Powder.
  • 1 Tsp Cinnamon powder.
  • 1 Tsp Paprika powder.
  • 2 Tbs Tomato puree.
  • 1 Red pepper cut in to small dice.
  • 1 Tin Chopped tomatoes.
  • 1 Pt Double cream
  • 2 Tubs of Plain yogurt.
  • 2 Fresh chillies chopped.
  • Salt & Pepper.

Method.

  • Cut the chicken in to pieces & take of outer skin.
  • Blend the garlic, ginger & onion in separate batches in a blender until smooth.
  • Then add a little oil in to a frying pan & cook the onion until slightly brown
  • Then add the ginger & garlic paste & sauté..
  • Then add tomato puree & cook for a further two minutes.
  • Then add all dry spices & sauté then add some water & cook for another 2 minutes.
  • Then add the chicken pieces & coat evenly with this mixture.
  • Then add the chopped tomatoes & bring the mixture to the boil then take it back to a very low simmer.
  • Then add the red pepper, cream, fresh chili & yogurt & mix thoroughly & cook slowly for around 40 minutes.
  • Serve with jasmine rice.
