These sausage rolls are fun and easy to make and much more tasty and nutritious than any shop bought variety.
This recipe makes 6 sausage rolls or 18 cocktail ones
Ingredients
- 375g pack ready rolled puff pastry
- 420g sausage meat
- 4 tbsp. dried apricots, chopped roughly
- 3 tbsp parsley, chopped
- 1 egg
You will need
- 1 non stick baking tray
- 1 small knife
- 1 fork
- 1 spoon
- 1 chopping board
- 1 pastry brush
- 1 small bowl
- 1 large bowl
Method:
- Place the sausage mince, parsley and apricots into a large bowl and triangles mix together well.
- Cut the pastry into 2 large rectangles.
- With a spoon, place half the mince down one side of the pastry, leaving a 1.5 cm edge. Repeat this with the other sheet of pastry.
- With a clean fork beat the egg in a small bowl. With the pastry brush the egg along the length of the pastry on the opposite side to the filling.
- Starting from the filled side roll the pastry over and seal it by pressing along the edge.
- Brush the top of the sausage roll with the egg using the pastry brush.
- With the small knife make small diagonal cuts along the top of the rolls.
- Cut each roll into 3 even rolls with the knife or 6 pieces for cocktail size.
- Place the sausage rolls on the baking tray and place in the hot oven at 220°C *remember to have oven gloves on*.
- Cook the rolls for 15-20 minutes. The pastry should be cooked and golden brown. Allow them to cool slightly before eating.
- Now they are ready to EAT!!!
