
These kebabs are totally unrelated to satay kebab, they are encrusted in a dry peanut mixture and simply grilled or barbecued with a mouth watering result.

Cooking Time: 5 minutes
Kebabs:
- 700g ostrich fillet steak
- 24-30 wooden skewers
Spice Mix:
- 1 tsp caster sugar
- 2 tsp ground garlic
- 2 tsp ground ginger
- 1 tsp ground hot paprika
- 1 tsp smoked paprika
- 1/2 tsp ground chili
- 2 tsp ground cinnamon
- 100g peanut
- pinch salt
To Cook:
- groundnut oil or olive oil
To Serve:
- Yoghurt
- Deep fried plantain slithers (see yam balls recipe)
Method:
Ostrich: Slice the ostrich into wide thin strips and set aside. Soak the wooden skewers in water (for at least 30 minutes).
Spice Mix: Place all the ingredients in a food processor and so that you have a coarse crumb mixture. Place in a bowl.
Kebabs: Place the ostrich strips into the spice mixture and coat them well. Thread single strips of steak onto the wooden skewers. Place them on a tray and cover them with cling film and leave them for at least 1 hour before cooking.
To Cook: Heat a grill to a high heat or barbecue. Brush the kebabs with oil and grill under a high heat for 8 minutes turning halfway or on a hot barbecue.
To Serve: Place 4-6 kebabs on each plate with a spoonful of yoghurt and garnished with plantain slithers (optional). Serve.
