Dipping Sauce:
- 100ml water
- 2 tsp caster sugar
- 1 red chilli, finely chopped
- 2 garlic cloves, finely chopped
- juice of 1/2 a lemon
- 1 tsp rice wine vinegar or white wine vinegar
- 2 tbsp fish sauce
Method:
Place the water in a saucepan with the sugar and bring it to the boil and leave it to simmer until the sugar is dissolved. Remove it from the heat and alow it to cool.
Place the chilli and garlic in a mortar pestle and grind it to a paste add the sugar water, fish sauce and lime and mix it together until well combined.
Serve the sauce in small dipping sauce bowls garnished with or without your choice of garnish (corriander, peanuts or carrot).
