Chinese Steamed Chicken

Serves 6

This is a simple, low calorie, delicious way to cook chicken.

Ingredients:
Pounds boneless chicken

Seasoning
1 half teaspoons sugar
2 tablespoons rice wine
2 tablespoons soy sauce
half teaspoons kosher salt
1 tablespoon cornstarch
6 dried black mushrooms
3 thin slicesfresh ginger, each about the size of a quarter
2 tablespoons corn oil
Fresh hot green chili peppers, shredded

Instructions:
1. Remove the excess skin from the chicken and cut chicken into l/2 inch chunks. Put in a mixing bowl, add the seasoning ingredients and mix until pieces are coated.

2. Soak the mushrooms in warm water for 30 minutes. Remove the stems and discard.

3. Place the chicken in a heatproof serving dish with a 2 inch rim. Arrange the ginger slices over the chicken and then the mushrooms over all. Place the dish in a steamer on a rack set over half inches or more of boiling water. Cover and steam for 40 minutes. Stir the chicken once or twice during the cooking.

4. Meanwhile, heat a saucepan and add 1 tablespoon oil. Add the peppers and stir fry for a few seconds.

5. Remove the chicken from the steamer, arrange the peppers on top of the steamed chicken and serve at once.
