Here s a simple and delicious way to grill fresh fish in the summer. The medium hot chili pepper gives it a touch of spiciness. Serve it with Fried Rice.
Ingredients:
3 tablespoons soy sauce
4 tablespoons corn oil
1 half pounds tile fish, salmon or halibut fillets
1/8 teaspoon white pepper
2 teaspoons finely shredded fresh ginger
2 hot green chili peppers, seeded and shredded fine
Instructions:
1. Rub the soy sauce and 2 tablespoons of oil over the fish fillets. Sprinkle the white pepper and ginger on the fish, then refrigerate for 1 hour.
2. Heat a small skillet. Add remaining 2 tablespoons oil and quickly stir fry the chili peppers for about 1 minute. Set aside.
3. Heat an outdoor grill until very hot. Brush the grill with oil, then place fish on grill. Cook for 2 minutes, then carefully turn over and cook another 2 minutes or until just done. Transfer to a serving platter, garnish the top with the peppers and serve.
