Borscht Soup

Ingredients

  • 1Tbs Oil.
  • 225gr Onions peeled & finely chopped.
  • 225gr Potatoes peeled & cut in to cubes.
  • 2 Carrots grated.
  • 1 ½ Pt Beef stock.
  • 225gr Cooked fresh beetroots peeled & grated.
  • Juice of 1 lemon.

Method.

  • Heat the oil in a pan & sauté the onion & potato until the onion becomes soft.
  • Add the carrots & stock & bring to the boil for 5 minutes then simmer for 10 minutes.
  • Then add the cooked beetroot & lemon juice & simmer for another 10 minutes.
  • Now puree the soup in a liquidizer & pass through a sieve & return back to the pan bring to a simmer & check for seasoning & serve.
  • You may want to put a spoonful of sour cream in the centre of each plate of soup but this is optional.
