Roasted Sichuan Peppercorns

Sichuan peppercorns have a distinctive aroma that is released when they are roasted.

Ingredients:
2 tablespoons Sichuan peppercorns

Instructions:
1. Place the peppercorns in a small, dry skillet. Shake the skillet over medium heat until the peppercorns become fragrant, about 3 to 4 minutes. Cool.

2. Crush the peppercorns with a rolling pin or grind in a blender. Strain through a fine sieve and store in an airtight jar.
